What are Green Tomatoes?
Unripe tomatoes or heirloom varieties.
Where can I find Green Tomatoes?
If you have a Wegman's near you check there, you can probably also find them at your local Farmer's Market, Trader Joe's or Whole Foods.
What you'll need:
2-3 Medium or Large Green Tomatoes
1 bag of pork grinds (if you aren't going for low carb you can use panko or corn meal)
3/4 cup - Buttermilk
2 - Large eggs
1/4 tsp - Salt & Pepper
1/4 tsp - Garlic Salt
1/4 tsp - Parsley
3/4 cup - Parmesan Cheese
1/4 tsp - Oregano (optional)
Air fryer
Parchment Paper
INSTRUCTIONS:
Preheat Air Fryer to 400 degrees
Slice tomatoes and place on a paper towel to drain
Crush Pork grinds, you can use a food processor if you have one. I used my blender.
Add buttermilk and eggs in a bowl then mix.
In another bowl, mix pork grinds, salt, pepper, garlic salt, parsley and parmesan cheese and combine all ingredients together.
Using a fork, coat both sides of tomato with egg mixture, then coat both sides with dry mixture, press gently to adhere coating. Place tomato on parchment paper until ready to go in air fryer.
Add coated tomatoes to air fryer for about 15 minutes, do not overlap. Cook in batches if needed. After 15 minutes, turn tomatoes over and cook an additional 15-20 minutes.
Remove from Air fryer and serve with Remoulade sauce (optional).
