Caribbean Jerk Salmon w/Mango Salsa



*Wash/Clean all meat and fresh produce.


What you'll need for the Salmon (4 servings):


2 - tbsp Olive oil

4 - Salmon fillet

1/2 tsp - salt

1/2 tsp - black pepper

1 tsp - Jerk Seasoning

1/2 tsp - Allspice

1/2 tsp - Thyme

1 1/2 tbsp - Soy Sauce

3 tbsp - honey

1/2 tbsp - fresh lime juice

2 tbsp - butter


Directions:


  1. Season both sides of the salmon with salt, pepper, jerk seasoning, Allspice and Thyme.

  2. Heat olive oil in a skillet on medium-high heat. Add salmon to skillet and cook on each side for about 4-6 minutes. Remove from heat when salmon is done to your likeness.

  3. In a small sauce pan, melt better then add soy sauce, honey and lime juice. Simmer for about 3 minutes then drizzle over salmon.


What you'll need for the Mango Salso (4 servings):


2 - Mangoes

Juice of 1 lime

2 tbsp - cilantro

1 tbsp - Jalapeno peppers

1 - medium red onion


Directions:


1. Peel and cut the mango into diced size pieces.

2. Chop onion into small diced size pieces

3. Finely chop jalapeno pepper (be sure to wash hands, utensils and cutting board after handling peppers).

4. Chop fresh cilantro.

5. Add all ingredients to a bowl. Add lime juice. Combine/mix all ingredients the keep in fridge until you're ready to serve.

6. Enjoy!
