Chicken in a Lemon Garlic Cream Sauce

Updated: Oct 3, 2020

Just wanted to share another one of our favorite meals. This delicious Chicken covered in a Lemon Garlic cream sauce....Sooooooo yummy! 😋😋😋This is definitely one you should add when you're planning out your meals , it can be served over pasta, with rice or with veggies. The chicken is so tender & juicy, and the sauce is just the icing on the cake. I served it over Green Lentil Spaghetti (a plant based protein pasta) and it taste just like some regular angel hair pasta.

What you'll need:

  • 4 boneless skinless chicken breasts (or chicken thighs)

  • 1 cup - chicken broth

  • Juice from lemon -, about 2 tablespoons

  • Red pepper flakes (to taste)

  • 1 tbs - minced garlic

  • 1 tbs - olive oil

  • 1 tsp - black pepper

  • 1 tsp - lemon pepper seasoning

  • 1/2 tsp - garlic salt

  • 2 tbs - butter

  • 1/3 cup - chopped red onions or shallots

  • 1/3 cup - heavy whipping cream

  • 2 tbs - chopped parsley for garnishing (optional)

Instructions:

Note: If Cooking with pasta or rice follow instructions on packaging.

  1. Preheat the oven to 375°F

  2. If chicken breast are to thick you can slice them in half or use a mallet to pound them down to about 1/2 thickness.

  3. Season both sides of chicken with pepper, lemon pepper seasoning, & garlic salt

  4. In a mixing bowl, combine chicken broth, red pepper flakes, minced garlic and lemon juice. Set aside.

  5. Heat olive oil in a oven safe skillet. Add chicken and cook on each side for about 3 to 4 minutes. Don't worry if chicken is not cooked all the way through, it will finish cooking in the oven.

  6. Transfer chicken to a plate.

  7. In the same skillet, reduce heat to low and add red onions or shallots, then add broth mixture. Using a wooden spoon or whisk scrape bottom of skillet to make sure nothing is sticking.

  8. Adjust heat to medium-high heat and simmer for about 10 minutes (until about 1/2 the sauce still remains)

  9. When the sauce has thickened remove skillet from the heat.

  10. Add butter until melted. Add heavy cream and mix.

  11. Turn the heat back on for about 30 to 45 seconds.

  12. Turn the heat off, then add your chicken back to the skillet, spoon some of the sauce over the chicken.

  13. Transfer chicken to the oven and cook for about 10 minutes or until chicken is cooked thoroughly.

  14. Garnish with lemon slices and parsley (optional).

  15. Enjoy!
