Whenever I want a good low-carb, high protein dish, stir-fries always fit the bill. This is literally a one pan dinner made in under 20 minutes and it's keto-friendly. It taste just like a traditional Asian egg roll without the wrapper and the whole family loved it!
What you'll need (servings 4):
1 tbsp - olive oil
1 pound ground pork, turkey, or chicken
1/2 tsp - 21 Seasoning salute (Trader Joe's)
Freshly ground black pepper
1/3 cup - mayonnaise
3 cloves garlic, minced
1 to 2 tsp - Sriracha or hot sauce
4 scallions, thinly sliced (about 1/3 cup)
14 to 16 oz. - coleslaw mix
2 tbsp - soy sauce
Directions:
1. Heat the oil in a large frying pan over medium-high until shimmering. Add the ground meat and season with the 21 seasoning salute and pepper. Cook, breaking up the meat into small pieces with a wooden spoon until cooked through, about 5-6 minutes.
2. In a small bowl, stir the mayonnaise and 1 teaspoon of the hot sauce together in a small bowl. Taste and add more hot sauce as needed; set aside. You can also use Yum-yum sauce if you have it! Yummy!
3. Add the garlic and scallions to the pan with meat and cook until fragrant, about 30 seconds. Add the coleslaw mix and soy sauce and cook, stirring occasionally, until the vegetables are crisp-tender, about 3-4 minutes. Serve the stir-fry in bowls drizzled with your spicy mayonnaise or Yum Yum sauce.
