Lasagna Soup - Dinner under an hour

This easy Lasagna soup has everything you love about Lasagna all in one bowl! It's a great cold weather - comfort food, but I've also made it during the Spring & Summer times, the flavors are so bold and delicious. Back when I was living in L.A., we never really had a winter season, I could walk around in sandals and maxi-dresses almost all year round. But here on the East coast, I'm constantly wrapped up in a cozy throw blanket, fuzzy-soft socks sweatpants with a bowl of soup or chili within arms reach. Well, September is now here! It will soon begin to get a little cooler, we'll be pulling out the scarves, boots and over-sized sweaters. The leaves will begin to start changing colors and soup will definitely be on the menu.


For this weeknight (or weekend) family meal, I usually just serve this Lasagna soup with some warm Italian bread or baguettes and a chopped salad. This is definitely a quick & easy meal the whole family will enjoy!



What you’ll need (6-8 servings):

  • Ground Beef, Ground Turkey, Ground Chicken or Ground Pork

  • Lasagna noodles

  • 14.5 oz. canned diced tomatoes

  • 30 oz. canned tomato sauce

  • 4 cups chicken broth

  • 1/4 teaspoon liquid smoke optional

  • 1/2 teaspoon Worcestershire sauce

  • 1 teaspoon parsley

  • 2 teaspoons oregano

  • 2 teaspoons basil

  • 1 teaspoon thyme

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 2 tablespoons brown sugar

  • 1/4 teaspoon red pepper flakes (optional)

  • salt & pepper (to taste)

  • 1 bay leaf

  • 3/4 cup parmesan cheese

  • 2 tablespoons fresh parsley (finely chopped)

  • 1 tablespoon olive oil

  • 1 tablespoon garlic (minced)

  • 1 cup onions (chopped)

For Garnishing (optional)

  • Red Pepper Flakes

  • Mozzarella shredded

  • Ricotta

  • Fresh parsley

Instructions


Prepare The Noodles

1. Cook lasagna noodles according to package instructions.

2. Allow noodles to cool and then cut into bite-sized (2 inch) squares. Set aside.


Prepare the Soup

Heat olive oil in a large pot and add onions.

  1. Heat olive oil in a large pot, once oil is hot add onions and sauté onions are translucent.

  2. Add Garlic, cook until fragrant

  3. Add ground beef or whichever protein you choose and cook until beef is browned. Drain off the fat.

  4. Stir in can of diced tomatoes, tomato sauce, liquid smoke, brown sugar, chicken broth and Worcestershire sauce

  5. Stir in Parsley, oregano, basil, thyme, garlic powder, onion powder, and red pepper flakes.

  6. Add salt and pepper to taste. Taste, if needed adjust seasonings to your liking.

  7. Add bay leaf and simmer for 15-20 minutes.

  8. Add cooked lasagna pieces.

  9. Stir in fresh parsley and parmesan cheese.

  10. Divide soup into serving bowls and garnish with mozzarella cheese, ricotta and fresh parsley (if you are using it). Enjoy!
